Although the texture of the finished product is slightly different from kanten powder (with the jelly made from ito kanten being slightly firmer), kanten powder and ito kanten are both made of 100% red seaweed.
The difference is that ito kanten comes from a red seaweed called Tengusa (Gelidiaceae), which tends to be more limited in supply. Conversely, kanten powder is usually made from Ogonori (Gracilaria) or a mixture of Ogonori and Tengusa.
That's why ito kanten tends to be more expensive.
In addition to the price, another reason why a majority of people use kanten powder is because it is easier to use. ito kanten has to be soaked in water for a while (I usually soak a day before using), and it takes more time for it to become completely dissolved. Also, four grams of ito kanten performs equally to two grams of kanten powder.
Since it is an excellent coagulant with high transparency, ito kanten is mainly used by professional Japanese confectionery chefs for making traditional Japanese desserts.
