Mandarin Orange Milk Kanten (みかん牛乳寒天)
When it comes to classic kanten sweets, mandarin orange milk kanten is always a popular choice. Many Japanese adults probably have fond memories of this kanten recipe as their mom's taste. Whenever I make this kanten sweets for my daughter, I feel happy to be able to have a connection with my mom.
Ingredients:
-Kanten powder (粉寒天) 2.5g
-Milk (牛乳) 500ml
*Homogeneous milk (3.25%) preferred.
-Sugar (砂糖) tbsp2 (大2)
-Honey/Condensed milk tbsp1 (大1)
-Mandarin orange can (みかんの缶詰) moderate amount (適量)
Pre-preparation:
①Leave Milk to room temperature.
1. Pour milk (①) into pan and add kanten powder, then stir well.
2. Boil the mix (1.) with low-medium heat at least for 2mins while keep stirring.
*Don't boil over to become bubbling.
3. Add sugar and stir well until completely dissolved. And then turn down the heat to low.
4. Add honey or Condensed milk into the mix(3.) and stir well.
5. Turn off the heat and strain it into a bowl.
6. Wait a little until the mix (5) becomes not too hot.
7. Pour the mix (6.) into small cups and decorate them with mandarin orange as you like, and then cool them down in the fridge.
事前準備:
①牛乳を室温に戻す。
1. 牛乳①と粉寒天を鍋に入れてかき混ぜます。
2.火にかけます。弱中火にして粉寒天を煮溶かす。この時は沸騰しない様に注意しながら常にかき混ぜましょう。(様子を見ながら最低2分は煮てください。)
3.砂糖を加えて溶けたら弱火に落とします。
4.蜂蜜(またはコンデンスミルク)を加えて溶かしたら火から下ろす。
5.濾し器で濾してボール上で粗熱を取ります。
6.粗熱が取れたらカップや容器に入れてみかんをお好きなだけ飾ったら固めます。
7.そのままでも固まりますが、冷蔵庫でよく冷してからつるんとお召し上がりください♪
