Homemade Pico de Gallo (Fresh Salsa フレッシュサルサ)

Homemade Pico de Gallo (Fresh Salsa) is the best (so fresh, healthy and easy-to-make)! 
But, by simply adding Kanten Salad Flakes to the salsa makes it even better!! 
You know why? It’s because:
1. Kanten flakes absorb the excess juices (and flavour) from the salsa, preventing the salsa from being too runny.
2. Kanten is an excellent source of dietary fibre (80% by content!), while adding virtually no calories!
3. They provide an additional layer of texture and gives a sense of fullness, making it a perfect complement to low-carb meals.

<Pico de Gallo (Fresh Salsa) Recipe>

[Ingredients]

-2-3 tomatoes (depending on the size)(トマト2-3個*大きさによる)
-1/2 sweet or red onion(スウィートオニオン又はレッドオニオン半分)
-1 cup of cilantro (パクチー1カップ)
-1 cup of Kanten Salad Flakes (寒天サラダ1カップ)
-1 jalapeño or hot pepper (ハラペーニョ又はトウガラシ)
-1 lime juice(ライム汁1個分)
-Salt and pepper to taste (塩コショウ少々)

[Instructions]

1. Soak the kanten salad flakes in water for 5 mins. Squeeze well to drain off the water thoroughly from the kanten.
2. Roughly cut the veggies and place them in a food processor. Add the kanten flakes (1.) and chop them (not too much).
3. Place in a serving bowl, add freshly squeezed lime juice and salt and pepper to taste. Mix well and let the salsa sit for at least 30 minutes in the fridge.
Serve fresh with tortilla chips, tacos, enchiladas or almost any dish!

[作り方]

1. 寒天サラダフレークを水に5分ほど浸けて戻したら、よく絞り水をしっかりと切ります。
2. 野菜を粗切りしてからフードプロセッサーの中に入れます。水で戻した寒天(1.)を加えて刻みます。(細かくなりすぎない程度に)
3. (2.)をボールに移したらライム汁を絞り入れ、塩コショウを加えて味を見てください。よく混ぜてから冷蔵庫の中で味がなじむように30分は休ませましょう。
